FFmpeg 8.1.2 — Subtitle Audit offline LGPL build (ffprobe helper)

Product packaging: Subtitle Audit ships Contents/Helpers/ffprobe only.
It does not ship the ffmpeg executable. The configure recipe still enables
ffmpeg tooling during the FFmpeg source build; only ffprobe is copied into
the app bundle.

Verified from the shipped helper via `ffprobe -buildconf` / `ffprobe -version`
