FFmpeg 8.1.2 — Resolution Audit offline LGPL build (ffprobe helper)

Product packaging: Resolution Audit ships Contents/Helpers/ffprobe only.
It does not ship the ffmpeg executable. The configure recipe still enables
ffmpeg tooling during the FFmpeg source build; only ffprobe is copied into
the app bundle.

Verified from the shipped helper via `ffprobe -buildconf` / `ffprobe -version`

Signing note: Release/ad-hoc codesigning changes on-disk helper bytes. Compare
unsigned hashes only after `codesign --remove-signature`, or record the signed
helper checksum separately for a specific build artifact.
